Baked Pear Bread with Almond Glaze

A delightful treat that combines the sweetness of ripe pears with the rich flavor of almonds, perfect for breakfast or dessert.

  • 4 ripe pears, peeled and diced
  • 1 teaspoon cinnamon
  • 1/4 cup honey
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup almonds, chopped
  • 1/2 cup powdered sugar (for glaze)
  • 12 tablespoons almond milk (for glaze)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease your loaf pan with butter or cooking spray.
  2. In a large bowl, combine diced pears, 1 teaspoon of cinnamon, and 1/4 cup of honey. Mix well and let sit.
  3. In another bowl, whisk together 2 cups of all-purpose flour, 1 teaspoon of baking powder, 1/2 teaspoon of baking soda, and 1/2 teaspoon of salt.
  4. In a separate bowl, cream together 1/2 cup of unsalted butter and 1 cup of brown sugar until fluffy.
  5. Add 2 large eggs and 1 teaspoon of vanilla extract to the butter-sugar mixture and mix until combined.
  6. Gradually add the dry ingredients to the wet mixture, stirring gently until just combined.
  7. Fold in the pear mixture and 1 cup of chopped almonds.
  8. Pour the batter into the greased loaf pan and smooth the top.
  9. Bake in the preheated oven for 60-70 minutes, checking for doneness with a toothpick.
  10. While the bread cools, prepare the glaze by mixing 1/2 cup of powdered sugar with 1-2 tablespoons of almond milk until smooth.
  11. Once the bread has cooled for about 10 minutes, drizzle the glaze over the top.
  12. Slice the bread and serve.

Notes

Use ripe, sweet pears for the best flavor; Bartlett or Bosc are recommended. Customize the glaze thickness as desired.
