Delightfully crispy Baked Smashed Fingerling Potatoes that are easy to make and perfect as a side dish.

  • 1.5 lbs fingerling potatoes
  • 3 tablespoons olive oil
  • 4 tablespoons butter
  • 3 cloves garlic, minced
  • Salt and pepper to taste
  • Fresh herbs (e.g., rosemary or thyme) for garnish

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Boil the potatoes in salted water until fork-tender, about 15-20 minutes.
  3. Drain and let the potatoes cool slightly.
  4. Gently smash each potato on a baking sheet with the bottom of a glass or fork.
  5. In a small saucepan, melt the butter over medium heat, then add minced garlic and stir until fragrant.
  6. Pour the garlic butter over the smashed potatoes, drizzling with olive oil and seasoning with salt and pepper.
  7. Bake for 20-25 minutes until crispy and golden.
  8. Garnish with fresh herbs and serve hot.
