Eggnog Cookies

Delightful cookies infused with the creamy, spiced flavors of traditional eggnog, perfect for the holiday season.

  • 2 1/4 cups all-purpose flour (or a gluten-free 1:1 blend)
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 teaspoon ground nutmeg
  • 3/4 teaspoon ground cinnamon
  • 1/4 teaspoon kosher salt
  • 3/4 cup granulated sugar
  • 1/4 cup packed light brown sugar
  • 3/4 cup unsalted butter (softened)
  • 1 large egg
  • 1 1/2 teaspoons vanilla extract
  • 1/2 cup full-fat eggnog
  • 1 cup powdered sugar (for glaze)
  • 23 tablespoons eggnog (for glaze)

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare two baking sheets by lining them with parchment paper.
  2. In a large mixing bowl, combine the flour, baking soda, baking powder, ground nutmeg, ground cinnamon, and kosher salt. Stir until fully mixed.
  3. Cream together the softened unsalted butter, granulated sugar, and packed light brown sugar until light and fluffy, about 2-3 minutes.
  4. Beat in the egg, vanilla extract, and eggnog until combined. Gradually add the dry ingredients, stirring until just combined.
  5. Use a cookie scoop or tablespoon to portion out the dough on the prepared baking sheets, leaving enough space between each mound.
  6. Bake in the preheated oven for 10-12 minutes until golden around the edges but soft in the center.
  7. Let the cookies cool on the baking sheets for a few minutes before transferring to wire racks.
  8. For the glaze, whisk together powdered sugar and 2-3 tablespoons of eggnog until smooth, then drizzle over cooled cookies.

Notes

These cookies can be stored in an airtight container for about a week or frozen for up to three months.
