Best Ever Ground Beef Orzo

A comforting and fulfilling one-pot dish featuring lean ground beef, orzo pasta, and fresh spinach, perfect for weeknight dinners.

  • 1 pound Lean Ground Beef (or ground turkey/chicken)
  • 1 medium Onion, finely chopped
  • 3 cloves Garlic, minced
  • 1 cup Orzo Pasta (or small pasta shapes like ditalini)
  • 14.5 ounces Canned Diced Tomatoes (or crushed tomatoes)
  • 2 cups Low-Sodium Beef Broth (or vegetable broth)
  • 1 tablespoon Italian Seasoning
  • 2 cups Fresh Spinach (or kale/swiss chard)

Instructions

  1. Heat a large pot or skillet over medium heat and add the ground beef. Cook for 5-7 minutes until browned and fully cooked.
  2. Add the chopped onion and sauté for 3 minutes until soft, then mix in the minced garlic and cook for 1 more minute.
  3. Pour in the canned diced tomatoes and beef broth, stirring to combine.
  4. Add the orzo pasta and Italian seasoning, ensuring the pasta is fully immersed in the liquid.
  5. Bring the mixture to a simmer, cover the pot, and reduce heat to medium-low. Cook for 10-12 minutes, stirring occasionally.
  6. When the orzo is al dente, stir in the fresh spinach and let it wilt for 1-2 minutes.
  7. Serve hot, garnished with grated Parmesan cheese if desired.

Notes

Customize by adding more vegetables or using different types of meat. Can be stored in the fridge for 3-4 days or frozen for up to 2-3 months.
