  • 2 tablespoons taco seasoning (homemade or store-bought)
  • 1 cup water
  • 1 cup frozen corn
  • 1 poblano pepper, diced
  • 1 cup shredded cheese (optional)
  • Fresh cilantro, for garnish
  • Avocado slices, for serving
  • Sour cream, for serving

Instructions

  1. Prep Your Ingredients: Dice the onion and poblano pepper, mince the garlic, and cube the sweet potatoes.
  2. Brown the Ground Beef: Heat a skillet over medium heat, add ground beef, and cook for 5-7 minutes, stirring frequently. Drain excess grease.
  3. Add Flavors: Add minced garlic and taco seasoning to the beef, cooking for about a minute.
  4. Cook the Sweet Potatoes: Add cubed sweet potatoes and 1 cup water to the skillet, stir, cover, and cook for 10-15 minutes until fork-tender.
  5. Incorporate Corn and Poblano: Stir in frozen corn and diced poblano pepper, cooking for an additional 5 minutes.
  6. Melt the Cheese (Optional): Sprinkle cheese on top, cover, and cook for a minute until melted.
  7. Garnish and Serve: Garnish with fresh cilantro and serve hot with avocado slices and sour cream.
