Cheesy Beef and Potato Casserole

A delightful casserole featuring layers of tender potatoes, savory ground beef, creamy sauces, and melted cheese, perfect for family dinners and gatherings.

  • 1 lb ground beef
  • 4 large russet potatoes, thinly sliced
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 2 cups shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1 cup heavy cream
  • ½ cup beef broth
  • 1 tbsp olive oil
  • 1 tsp smoked paprika
  • 1 tsp salt
  • ½ tsp black pepper
  • ½ tsp dried oregano
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • 1 tbsp fresh parsley, chopped

Instructions

  1. In a large skillet, heat the olive oil over medium heat.
  2. Add the finely chopped onions and minced garlic; sauté for about 2-3 minutes until fragrant.
  3. Add the ground beef and cook, stirring for about 5-7 minutes until browned. Drain excess fat.
  4. Season the beef with smoked paprika, salt, black pepper, dried oregano, garlic powder, and onion powder; mix well.
  5. In a separate saucepan, warm the heavy cream and beef broth over low heat until heated but not boiling.
  6. In a baking dish, layer thinly sliced potatoes, half of the seasoned beef mixture, and a layer of cheddar cheese. Repeat the layers with the remaining potatoes, beef, and cheddar cheese.
  7. Pour the warmed cream and beef broth mixture evenly over the layered ingredients.
  8. Top with mozzarella cheese.
  9. Cover with foil and bake in a preheated oven at 350°F (175°C) for 45 minutes. Remove the foil and bake for an additional 15 minutes until bubbly and golden.
  10. Allow to cool for about 5 minutes before garnishing with parsley and serving hot.

Notes

For variations, you can swap the ground beef for turkey or chicken, make it vegetarian with lentils or beans, or add a spicy kick with jalapeños.
