Cheesy Taco Potatoes

Delightful and customizable baked potatoes filled with flavorful taco meat and topped with melted cheese.

  • 4 large potatoes
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1 pound ground beef or turkey
  • 1 packet taco seasoning
  • 1 cup diced tomatoes
  • 1/2 cup diced onions
  • 1 cup sour cream
  • Salt and pepper to taste
  • Oil for frying

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash the potatoes thoroughly and slice them into thin wedges.
  3. Heat oil in a skillet over medium heat and fry the potato wedges until golden brown and crispy.
  4. In another skillet, cook the ground beef or turkey, adding the diced onion until the meat is browned and onions are translucent.
  5. Add the taco seasoning and diced tomatoes to the meat mixture, stirring well.
  6. Layer crispy potato wedges in a baking dish, top with the meat mixture, and sprinkle shredded cheese on top.
  7. Bake in the preheated oven for about 15 minutes until the cheese is melted and bubbly.
  8. Let it sit for a few moments before serving with sour cream on the side.
