Chewy Chocolate Chip Cranberry Cookies

  • 1/2 teaspoon salt
  • 3/4 cup unsalted butter, melted and cooled
  • 1 cup brown sugar, packed
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1 large egg yolk
  • 2 teaspoons vanilla extract
  • 1 cup semi-sweet chocolate chips
  • 1 cup dried cranberries

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a medium bowl, whisk together the flour, baking soda, and salt.
  3. In a separate bowl, mix the melted butter with both sugars until creamy. Add the egg, egg yolk, and vanilla, mixing until well combined.
  4. Gradually mix the dry ingredients into the wet mixture until just combined.
  5. Fold in the chocolate chips and dried cranberries.
  6. Scoop rounded tablespoons of dough onto a lined baking sheet.
  7. Bake for 10 to 12 minutes until edges are golden and centers are soft.
  8. Cool on the baking sheet for 5 minutes before transferring to a wire rack.

Notes

Do not overmix the dough to maintain a soft texture. For added chewiness, consider chilling the dough before baking.
