Chicken Kabob Marinade

A flavorful chicken kabob marinade that enhances juiciness and adds a zesty lemon kick, perfect for grilling.

Ingredients

  • 2 tablespoons olive oil
  • 1 large lemon (juiced & zested)
  • 2 cloves garlic (grated)
  • 1 teaspoon dried oregano
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 2 lbs chicken breasts (cubed)

Instructions

  1. In a mixing bowl, whisk together the olive oil, lemon juice, lemon zest, grated garlic, oregano, salt, and black pepper until well combined.
  2. Take the cubed chicken and place it in a large resealable bag or bowl. Pour the marinade over the chicken, making sure every piece is thoroughly coated. Seal the bag or cover the bowl and refrigerate for at least 30 minutes.
  3. If using wooden skewers, soak them in water for about 30 minutes to prevent burning. After marinating, remove chicken from the bag or bowl and thread onto skewers.
  4. Preheat grill to medium-high heat. Grill skewers for about 10-15 minutes, turning occasionally, until chicken reaches an internal temperature of 165°F (75°C).

Notes

For the best flavor, marinate chicken overnight. You can also add vegetables to skewers for a more colorful dish.
