Chicken Sausage Orzo

A delicious one-pot meal featuring chicken sausage, orzo pasta, and fresh broccoli, perfect for weeknight dinners.

  • 2 cups orzo pasta
  • 1 tablespoon olive oil
  • 1 lb chicken sausage, sliced
  • 3 cloves garlic, minced
  • 2 cups broccoli florets
  • 4 cups chicken broth
  • 1 teaspoon Italian seasoning
  • Salt and pepper, to taste
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons fresh parsley, chopped (for garnish)

Instructions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the sliced chicken sausage and cook for about 5-7 minutes until browned.
  3. Stir in the minced garlic and sauté for about 1 minute until fragrant.
  4. Add the broccoli florets and cook for about 2-3 minutes until slightly tender.
  5. Stir in the orzo pasta, chicken broth, Italian seasoning, salt, and pepper.
  6. Bring to a boil and then reduce to a simmer, cover, and cook for 10-12 minutes, stirring occasionally.
  7. Remove from heat and stir in the grated Parmesan cheese until melted.
  8. Garnish with chopped parsley before serving.
