Chocolate Vanilla Swirl Cookies

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 egg
  • 2 teaspoons vanilla extract
  • 2 1/2 cups all-purpose flour
  • 1/2 cup cocoa powder
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cream together the softened unsalted butter and granulated sugar until light and fluffy.
  3. Beat in the egg and stir in the vanilla extract to fully combine.
  4. In another bowl, whisk together the all-purpose flour, cocoa powder, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet mixture and stir gently until just combined.
  6. Divide the dough in half; keep one half plain and add cocoa powder to the other half.
  7. Roll out both portions of dough on a lightly floured surface.
  8. Layer the plain dough and chocolate dough, then roll together to form a log.
  9. Wrap the log in plastic wrap and chill in the refrigerator for at least 30 minutes.
  10. Slice the log into cookies of desired thickness.
  11. Place cookies on a baking sheet and bake for 10-12 minutes or until edges are set.
  12. Let cool on the baking sheet for a few minutes before transferring to a cooling rack.

Notes

For extra flavors, consider adding nuts or chocolate chips. Topping with frosting can enhance their appeal.
