Cinnamon Donut Bread

A delightful bread that combines the soft texture of bread with the warm, spicy sweetness of cinnamon, perfect for breakfast or as a sweet snack.

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 tablespoon ground cinnamon
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 2 large eggs
  • 1/2 cup whole milk
  • 1/2 cup unsalted butter, melted
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon almond extract (optional)
  • 1/4 cup brown sugar, packed
  • 1 tablespoon ground cinnamon (for topping)

Instructions

  1. Preheat oven to 350°F (175°C) and grease a loaf pan.
  2. In a large bowl, whisk together flour, sugar, cinnamon, baking powder, and salt.
  3. In another bowl, beat eggs, then mix in milk, melted butter, vanilla, and almond extract.
  4. Combine wet and dry ingredients, stirring gently until just combined.
  5. In a small bowl, mix brown sugar and cinnamon for topping.
  6. Pour half the batter into the prepared pan, sprinkle half the topping, then add remaining batter and top with remaining topping.
  7. Bake for 45-50 minutes, checking doneness with a toothpick. Allow to cool in the pan for 10 minutes before transferring to a wire rack.

Notes

Allow bread to cool before slicing. This helps to maintain the bread’s structure.
