Cornbread Casserole

A delightful dish combining the rich flavors of cornbread with a comforting casserole twist, perfect for gatherings and family dinners.

Ingredients

  • 1 cup cornmeal
  • 1 cup milk
  • 1 can creamed corn (15 oz)
  • 1 cup shredded cheese (cheddar or your choice)
  • 1/2 cup melted butter
  • 2 eggs
  • 1/2 cup sugar
  • 1 teaspoon baking powder
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, mix together the cornmeal, milk, creamed corn, shredded cheese, melted butter, eggs, sugar, baking powder, salt, and pepper. Stir until smooth.
  3. Grease a 9×13 inch baking dish.
  4. Pour the mixture into the prepared baking dish and spread it out evenly.
  5. Bake for about 30-35 minutes until golden brown and firm in the center.
  6. Cool slightly before serving. Enjoy!

Notes

Allow leftovers to cool completely before storing. Can be frozen for up to three months.
