Cowboy Cornbread Casserole

A hearty dish combining seasoned ground beef, beans, corn, and sweet cornbread, perfect for family dinners and gatherings.

  • 1 lb ground beef
  • 1 can black beans, drained and rinsed
  • 1 can corn, drained
  • 1 can diced tomatoes with green chilies
  • 1 packet taco seasoning
  • 1 cup shredded cheese
  • 1 cup cornbread mix
  • 1 cup milk
  • 1 egg
  • 1 cup shredded cheese for topping

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large skillet, brown the ground beef over medium heat for 6 to 8 minutes, then drain excess grease.
  3. Stir in black beans, corn, diced tomatoes, and taco seasoning; cook for 5 minutes.
  4. In a separate bowl, whisk cornbread mix, milk, and egg until smooth.
  5. Spread the beef mixture in a greased baking dish.
  6. Pour cornbread batter over the beef mixture, spreading it evenly.
  7. Top with shredded cheese.
  8. Bake for 25-30 minutes or until golden brown.
  9. Let cool for a few minutes before slicing and serving.
