Creamy Chicken Pesto Pasta

A delightful dish that combines creamy sauce with vibrant basil pesto and tender chicken for a satisfying meal.

  • 2 cups gluten-free bowtie pasta
  • 2 cups cooked chicken breast, shredded or diced
  • 1 cup heavy cream
  • 1/2 cup basil pesto
  • 1/4 cup grated Parmesan cheese (plus more for garnish)
  • 1 cup cherry tomatoes, halved
  • 1 tablespoon olive oil
  • 1/4 teaspoon garlic powder
  • Salt and pepper to taste
  • Fresh basil leaves for garnish

Instructions

  1. Boil a large pot of salted water and add gluten-free bowtie pasta. Cook according to package instructions, then drain.
  2. In a large skillet, heat olive oil over medium heat and add the cooked chicken. Sauté for about 2 minutes, sprinkling garlic powder over the chicken.
  3. Lower the heat and pour in heavy cream. Stir until it simmers, then add basil pesto and cook for 2-3 minutes.
  4. Toss the cooked pasta into the skillet, mixing to coat with the creamy pesto sauce. Gently fold in halved cherry tomatoes.
  5. Season with salt and pepper to taste, then sprinkle with Parmesan cheese and garnish with fresh basil leaves.
  6. Serve warm, optionally with a side salad or gluten-free bread.

Notes

Consider using leftovers for chicken or adding vegetables for extra nutrition. Serves well with a side of garlic bread.
