1 cup Quick-Cooking Grits
2 cups Water
1 tablespoon Cajun Spice
1 teaspoon Sea Salt
1/4 cup Chopped Chives
1 cup Shredded Cheddar Cheese
1 cup Vegetable Oil (for frying)
1 cup Marinara Sauce (for dipping)
1 tablespoon Lime Juice
Instructions
Bring 2 cups of water to a boil in a medium saucepan. Stir in 1 cup of quick-cooking grits and 1 teaspoon of sea salt. Reduce heat and cook grits for about 5 minutes, stirring occasionally.
Stir in 1 tablespoon of Cajun spice, 1/4 cup of chopped chives, and 1 cup of shredded cheddar cheese until the cheese melts.
Pour the mixture into a greased baking dish. Let cool to room temperature for at least 30 minutes.
Cut the cooled grits mixture into squares or scoop into small round balls.
Heat 1 cup of vegetable oil in a frying pan over medium-high heat. Fry the fritters until golden brown, about 3-4 minutes per side.
Remove from oil with a slotted spoon and drain on paper towels.
Mix 1 cup of marinara sauce with 1 tablespoon of lime juice for the dipping sauce.
Serve the fritters hot with the dipping sauce on the side.
Notes
Try different cheeses or add diced jalapeños for a spicy kick.
