Crockpot Cheesy Chicken Spaghetti

A comforting and creamy dish featuring tender chicken and cheesy goodness over spaghetti, perfect for any weeknight dinner.

  • 3 chicken breasts, whole or cut into large chunks
  • 1 (10 oz) can diced tomatoes with green chiles
  • 1 can cream of chicken soup
  • 1 can cream of mushroom soup
  • 1/2 onion, diced
  • 2 tsp minced garlic
  • 2 tsp Italian seasoning
  • 4 oz cream cheese, diced
  • 2 cups shredded cheddar cheese
  • 1 package (16 oz) spaghetti, cooked separately

Instructions

  1. Gather all your ingredients on the kitchen counter, dice the onion, mince the garlic, and cut the cream cheese into small cubes.
  2. Place the chicken in the crockpot, either whole or cut into large chunks.
  3. Pour the can of diced tomatoes with green chiles over the chicken, followed by both cans of cream of chicken soup and cream of mushroom soup.
  4. Sprinkle the diced onion and minced garlic over the mixture. Add the Italian seasoning.
  5. Toss the diced cream cheese on top of everything.
  6. Cover the crockpot and cook on low for 6-8 hours or on high for 3-4 hours.
  7. About 30 minutes before serving, cook the spaghetti according to package instructions, drain, and set aside.
  8. Once the chicken is cooked, shred it in the crockpot and stir everything together.
  9. Stir in the shredded cheddar cheese until melted.
  10. Add the cooked spaghetti and fold gently until fully coated with the sauce.
  11. Allow to heat through for a few more minutes before serving.

Notes

For variations, try adding more vegetables or spice it up with jalapeños. You can also use frozen chicken—a longer cook time will be required.
