Easy Mediterranean Chicken

A delicious and healthy meal featuring tender chicken, olives, artichokes, and fresh herbs, infused with zesty lemon flavors.

  • 4 boneless, skinless chicken breasts
  • 1 cup green olives, pitted and halved
  • 1 cup marinated artichoke hearts, drained
  • 3 cloves garlic, minced
  • 2 teaspoons dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 1 lemon, juiced
  • Fresh herbs for garnish (optional)

Instructions

  1. Heat 2 tablespoons of olive oil in a large skillet over medium heat.
  2. Season chicken breasts with salt, pepper, oregano, and basil.
  3. Add the seasoned chicken to the skillet and cook for 5-7 minutes on each side until cooked through.
  4. Add minced garlic, olives, and artichoke hearts to the skillet, along with the lemon juice.
  5. Lower the heat and simmer for 5-10 minutes to meld flavors.
  6. Serve warm, garnished with fresh herbs if desired.

Notes

Use fresh ingredients for the best flavor. Chicken thighs can be an alternative if you prefer dark meat.
