Easy Spinach and Feta Patties

Delicious spinach and feta patties, packed with flavor and nutrition, perfect for snacks, light meals, or as a side dish.

  • 2 cups fresh spinach, chopped
  • 1 cup crumbled feta cheese
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 egg
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese (optional)
  • 1/4 tsp dried oregano
  • Salt and pepper to taste
  • 1 tbsp olive oil (for greasing)
  • 1 tbsp olive oil (for brushing the patties)

Instructions

  1. Preheat your oven to 375°F (190°C) and prepare a baking sheet by lining it with parchment paper or lightly greasing it with olive oil.
  2. In a large bowl, combine the chopped spinach, crumbled feta cheese, finely chopped onion, minced garlic, egg, breadcrumbs, Parmesan cheese (if using), dried oregano, salt, and pepper. Mix well until thoroughly combined.
  3. Shape the mixture into small patties, about 2-3 inches in diameter, and place them on the prepared baking sheet, spacing them evenly.
  4. Brush the tops of the patties with olive oil to help them become golden and crispy during baking.
  5. Bake in the preheated oven for about 20-25 minutes, flipping them halfway through, until golden brown and firm to the touch.
  6. Remove the patties from the oven and let them cool slightly before serving.

Notes

Best served warm with your favorite dipping sauces or tossed in salads.
