Easy Zuppa Toscana Soup

A comforting and hearty Italian soup featuring Italian sausage, potatoes, kale, and heavy cream.

  • 1 pound Italian sausage
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 4 medium potatoes, thinly sliced
  • 2 cups kale, chopped
  • 1 cup heavy cream
  • 1/4 teaspoon crushed red pepper flakes (optional)
  • Salt and pepper to taste

Instructions

  1. In a large pot over medium-high heat, cook the Italian sausage until browned, about 5-7 minutes.
  2. Add the chopped onion and sauté until translucent, about 3-4 minutes, then add the minced garlic and cook for 1 minute.
  3. Stir in the sliced potatoes and chicken broth, bring to a gentle boil, then reduce heat to low and simmer for 15-20 minutes until potatoes are tender.
  4. Add the chopped kale, stirring in until wilted, about 5 minutes.
  5. Pour in the heavy cream and season with salt and pepper; heat through for another 5 minutes before serving.

Notes

You can customize the soup with different vegetables or adjust the cream for a lighter version.
