Fruity Pebbles Cookies

Delightful cookies that combine the crunch of Fruity Pebbles with the softness of freshly baked cookies, perfect for all occasions.

  • 2 1/2 cups all-purpose flour
  • 1 tablespoon baking soda
  • 1/2 teaspoon salt
  • 1 cup (2 sticks) unsalted butter, softened
  • 1 cup granulated sugar
  • 1/2 cup packed light brown sugar
  • 2 large eggs
  • 2 tablespoons vanilla extract
  • 1 1/2 cups Fruity Pebbles cereal
  • 1 cup white chocolate chips
  • 1/2 cup rainbow sprinkles (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Line two baking sheets with parchment paper.
  3. Cream the softened butter with granulated sugar and brown sugar until creamy and light.
  4. Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
  5. Whisk together flour, baking soda, and salt in a separate bowl.
  6. Gradually add the dry mixture to the wet mixture and mix until just combined.
  7. Fold in the Fruity Pebbles, white chocolate chips, and rainbow sprinkles (if using).
  8. Scoop mounds of dough onto prepared baking sheets, leaving space between each.
  9. Bake for 10-12 minutes until edges are golden brown and centers remain soft.
  10. Cool on baking sheets for 5 minutes before transferring to a wire rack.

Notes

For thicker cookies, chill the dough for 30 minutes before baking to prevent spreading.
