Garlic Parmesan Chicken and Potatoes

A delicious and simple weekday dinner, combining tender chicken with crispy baby potatoes in a flavorful garlic and Parmesan mixture.

  • 6 bone-in, skin-on chicken thighs or breasts
  • 1 1/2 pounds baby potatoes, halved
  • 4 cloves garlic, minced
  • 1/3 cup grated Parmesan cheese
  • 3 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • Salt and freshly ground black pepper, to taste
  • 2 tablespoons fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, toss the baby potatoes with 1 tablespoon of olive oil, half of the minced garlic, oregano, thyme, paprika, salt, and pepper.
  3. Spread the seasoned potatoes on a large baking sheet in a single layer.
  4. Coat the chicken thighs with the remaining 2 tablespoons of olive oil, the other half of the minced garlic, salt, pepper, and grated Parmesan cheese.
  5. Place the chicken skin-side up on the baking sheet among the potatoes.
  6. Bake in the preheated oven for 35-40 minutes until chicken is crispy and fully cooked, internal temperature should be 165°F (75°C).
  7. For extra crispiness, broil for an additional 2-3 minutes.
  8. Remove from the oven and sprinkle with chopped parsley before serving.

Notes

Serve on a plate or on a platter for sharing. Consider adding dipping sauces like ranch or barbecue.
