Greek Chicken Skewers with Lemon Rice

  • 1.5 lbs boneless, skinless chicken thighs, cut into 1.5-inch pieces
  • Juice from 1/2 large lemon
  • 1 tbsp olive oil
  • 3 garlic cloves, minced
  • 1 1/2 tsp dried oregano
  • 1 tsp sweet paprika
  • 1 tsp honey or maple syrup
  • 1/2 tsp kosher salt
  • 1 tbsp olive oil (for rice)
  • 2 garlic cloves, thinly sliced (for rice)
  • 1 cup long-grain white rice
  • 1 3/4 cup low-sodium chicken stock or water
  • 1 tbsp lemon zest
  • Kosher salt and freshly ground black pepper, to taste
  • Juice from 1/2 large lemon (for rice)
  • Plain yogurt (for serving)
  • Fresh dill, chopped (for garnish)
  • Marinated olives (optional, for serving)

Instructions

  1. Soak the wooden skewers in water for about 30 minutes.
  2. In a bowl, marinate chicken with lemon juice, olive oil, garlic, oregano, paprika, honey, and salt for at least 30 minutes.
  3. In a saucepan, heat 1 tbsp olive oil, sauté garlic until fragrant, then add rice and cook for another minute.
  4. Add chicken stock/water to rice, bring to boil, reduce heat, cover and simmer for 15-20 minutes until tender.
  5. Stir in lemon zest and juice, season rice with salt and pepper, and fluff with a fork.
  6. Preheat grill to medium-high heat, thread chicken onto skewers and grill for 10-15 minutes, turning occasionally.
  7. Serve lemon rice topped with grilled chicken skewers, garnished with yogurt, dill, and olives if desired.

Notes

Marinating chicken longer enhances flavor. Use high-quality chicken thighs for best results.
