Greek Turkey Soup

A delightful Greek-inspired soup made with leftover turkey, rice, and fresh herbs, perfect for chilly days.

  • 1 cup Thanksgiving turkey leftovers (shredded or chopped)
  • 1 cup lemon juice
  • 1 cup rice (long-grain recommended)
  • Fresh herbs (dill and parsley)
  • Salt and pepper to taste
  • 4 cups chicken or turkey broth
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • Oil (for sautéing)

Instructions

  1. Prepare your ingredients by shredding or chopping your turkey, chopping the onion, and mincing the garlic.
  2. In a large pot, heat a splash of oil over medium heat. Add the chopped onion and minced garlic, sauté until fragrant and the onion is translucent (about 3-5 minutes).
  3. Stir in the shredded turkey and broth, bringing the mixture to a gentle simmer.
  4. Add the rice and simmer for about 15 minutes, until the rice is tender.
  5. Stir in the lemon juice and finely chopped fresh herbs.
  6. Season to taste with salt and pepper, mixing well.
  7. Ladle the soup into bowls and serve warm, optionally garnishing with extra herbs or lemon zest.

Notes

Consider serving with crusty bread or a fresh salad for a complete meal. Great for leftovers and can also be frozen.
