  • 2 grilled chicken breasts
  • 1 ripe avocado, diced
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1 red onion, thinly sliced
  • 4 cups mixed greens
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • Salt and pepper to taste
  • Optional: feta cheese, crumbled

Instructions

  1. Grill the chicken breasts until fully cooked, about 6-7 minutes on each side. Allow to cool, then slice into bite-sized pieces.
  2. Wash and prepare the vegetables. In a large mixing bowl, combine mixed greens, cherry tomatoes, cucumber, red onion, and avocado.
  3. Whisk together olive oil, lemon juice, salt, and pepper in a small bowl to make the dressing.
  4. Pour the dressing over the salad mixture and gently toss to coat.
  5. Add the sliced grilled chicken on top and sprinkle with crumbled feta cheese if desired.
