Healthy Cabbage Soup

A nutritious and flavorful soup that’s quick to prepare, ideal for busy days and meal prep.

Ingredients

  • 1 medium head of cabbage, chopped
  • 2 carrots, diced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 can diced tomatoes
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 1 tablespoon olive oil

Instructions

  1. Set your Instant Pot to the sauté mode.
  2. Add the olive oil, chopped onions, and minced garlic, sauté for 2-3 minutes until translucent.
  3. Introduce the diced carrots and chopped cabbage, sauté for about 5 minutes.
  4. Pour in the vegetable broth and diced tomatoes, stir well.
  5. Add dried thyme, salt, and pepper, mixing thoroughly.
  6. Close the lid and set to high pressure for 10 minutes.
  7. Allow the pressure to release naturally for 5 minutes, then quick release any remaining pressure.
  8. Serve hot and enjoy!

Notes

Customize with additional vegetables or protein to make it more filling.
