Healthy Greek Stuffed Peppers

A delicious and nutritious dish featuring vibrant bell peppers stuffed with a hearty filling of ground beef, chickpeas, and feta cheese, topped with tzatziki sauce.

  • 4 large bell peppers
  • 1 cup cooked chickpeas
  • 1 pound ground beef
  • 1 cup feta cheese, crumbled
  • 1/2 cup tzatziki sauce
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds.
  3. In a skillet, heat olive oil over medium heat and cook ground beef until browned, about 5-7 minutes.
  4. Add cooked chickpeas, garlic powder, onion powder, salt, and pepper; cook for an additional 5 minutes.
  5. Remove from heat and mix in crumbled feta cheese.
  6. Stuff each bell pepper with the mixture and pack gently.
  7. Place stuffed peppers upright in a baking dish.
  8. Cover with foil and bake for 25-30 minutes.
  9. Remove foil and bake for an additional 10 minutes.
  10. Serve topped with tzatziki sauce and garnish with fresh parsley.

Notes

Feel free to customize the stuffing ingredients to your taste. Use ground turkey, add more veggies, or try different cheeses.
