Healthy-ish Cosmic Brownies

A healthier twist on classic brownies made with dates, nuts, and cocoa powder, topped with colorful rainbow candy.

Ingredients

  • 1 cup dates, pitted
  • 1/2 cup walnuts or almonds
  • 1/2 cup cocoa powder
  • 1/2 cup almond flour
  • 1/4 cup maple syrup
  • 1/4 cup coconut oil, melted
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • Rainbow candy for topping

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Line an 8×8 inch baking pan with parchment paper.
  3. In a food processor, combine the pitted dates and walnuts or almonds, blending until finely chopped.
  4. Add cocoa powder, almond flour, maple syrup, melted coconut oil, vanilla extract, and salt to the food processor. Blend until smooth.
  5. Transfer the brownie batter into your prepared baking pan, spreading it evenly.
  6. Bake for 20-25 minutes, checking for doneness with a toothpick.
  7. Let the brownies cool briefly before topping with rainbow candy.
  8. Once completely cooled, slice into squares and serve.

Notes

These brownies can be stored in an airtight container at room temperature for up to 4 days or in the refrigerator for up to a week. They freeze well for up to 2 months.
