Hobo Casserole

A hearty and comforting casserole featuring ground beef, potatoes, and cheese, perfect for family dinners or gatherings.

  • 1 lb ground beef
  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 45 medium potatoes, thinly sliced
  • 1 ½ cups shredded cheddar cheese
  • ½ cup grated Parmesan cheese
  • 1 teaspoon dried Italian seasoning
  • ½ teaspoon paprika
  • Salt and pepper, to taste
  • ½ cup beef broth or water
  • ¼ cup milk (optional, for extra creaminess)
  • Fresh parsley (optional, for garnish)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a skillet over medium heat, heat olive oil and brown the ground beef for 5-7 minutes.
  3. Add chopped onion and minced garlic. Cook for another 3-4 minutes.
  4. In a 9×13 baking dish, layer the thinly sliced potatoes evenly at the bottom.
  5. Pour the cooked beef mixture over the potatoes.
  6. Sprinkle shredded cheddar and grated Parmesan cheese over the beef.
  7. Pour the beef broth (or water) over the mixture, and drizzle milk if desired.
  8. Cover with foil and bake for 40-45 minutes.
  9. Remove foil and bake for an additional 10-15 minutes until bubbly and golden brown.
  10. Garnish with fresh parsley before serving.
