Honey-Roasted Vegetables

Deliciously caramelized honey-roasted vegetables, perfect as a colorful side dish or a healthy meal addition.

  • 2 cups carrots, chopped
  • 2 cups bell peppers, chopped
  • 1 cup Brussels sprouts, halved
  • 1 cup zucchini, chopped
  • 3 tablespoons honey
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh herbs (such as thyme or rosemary) for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, toss the chopped carrots, bell peppers, halved Brussels sprouts, and chopped zucchini.
  3. Drizzle the vegetable mixture with olive oil and honey.
  4. Season with salt and pepper to taste.
  5. Toss the vegetables until they are well coated.
  6. Spread the coated vegetables out on a baking sheet in a single layer.
  7. Roast for 25-30 minutes, stirring halfway through.
  8. Garnish with fresh herbs before serving.
