Instant Pot Shredded Beef

A hearty and flavorful shredded beef dish made effortlessly in the Instant Pot, perfect for various meals like tacos, sandwiches, or over rice.

  • 2 pounds beef chuck roast
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 1 cup beef broth
  • 1 tablespoon smoked paprika
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste

Instructions

  1. Cut the beef chuck roast into large chunks.
  2. Set the Instant Pot to sauté mode and heat the olive oil. Add chopped onion and cook until translucent (3-4 minutes). Stir in minced garlic and cook for another minute.
  3. Season beef chunks with salt, pepper, smoked paprika, cumin, and chili powder.
  4. Place seasoned beef in the Instant Pot over the onions and garlic. Pour beef broth on top.
  5. Seal the lid and cook on high pressure for 60 minutes.
  6. Allow a natural pressure release for 10 minutes, then quick release any remaining pressure.
  7. Remove beef, shred with forks, and serve, optionally mixing it back into the juices.

Notes

Adjust spices according to your taste. For a spicier kick, consider adding cayenne or using spicier chili powder.
