Irresistibly Soft Christmas Gooey Butter Cookies

Delightful gooey butter cookies perfect for the holiday season, soft and chewy with a festive touch of powdered sugar and sprinkles.

  • 8 oz Full-fat Cream Cheese
  • 1 cup Unsalted Butter (softened)
  • 1 large Egg
  • 1 tsp Vanilla Extract
  • 1 box Yellow Cake Mix
  • 1 cup Holiday Sprinkles
  • 1 cup Powdered Sugar

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine cream cheese and butter. Beat until creamy and smooth (2-3 minutes).
  3. Add egg and vanilla extract. Mix until well combined.
  4. Gradually add yellow cake mix. Mix on low speed until just combined.
  5. Fold in holiday sprinkles using a spatula.
  6. Optionally, chill the dough in the refrigerator for about 30 minutes.
  7. Scoop and roll portions of dough into small balls (1-1.5 inches in diameter).
  8. Coat each ball in powdered sugar until fully covered.
  9. Line a baking sheet with parchment paper and space the dough balls on the sheet.
  10. Bake for 10-12 minutes until edges are lightly golden but centers are soft.
  11. Cool on the baking sheet for 5 minutes before transferring to a wire rack.

Notes

Use room temperature ingredients for smoother batter. You can store cookies at room temperature or refrigerate for longer shelf life.
