  • 1 medium carrot, finely diced
  • 1 celery stalk, finely diced
  • 1 small onion, finely chopped
  • 1 garlic clove, minced
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup grated Parmesan cheese (plus more for garnish)
  • 1 tablespoon fresh parsley, chopped (for garnish)

Instructions

  1. Prepare the Vegetables: Finely dice the carrot and celery. Chop the onion and mince the garlic.
  2. Cook the Pasta: In a large pot, heat olive oil and sauté onion for 2-3 minutes. Add carrot, celery, and garlic; cook for 5 minutes.
  3. Simmer the Soup: Pour in broth and bring to a boil. Add pastina and cook according to package instructions, about 6-8 minutes.
  4. Final Touches: Season with salt and pepper. Mix in grated Parmesan cheese and stir until melted.
  5. Serve: Ladle into bowls and garnish with extra cheese and parsley.
