Keto Philly Cheesesteak Roll-Ups

Delicious and satisfying roll-ups featuring flavorful ground beef, sautéed vegetables, and gooey provolone cheese, perfect for a low-carb lifestyle.

  • 1 lb ground beef
  • 1 green bell pepper, thinly sliced
  • 1/2 small onion, finely chopped
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 1/2 tsp smoked paprika
  • 1/2 tsp black pepper
  • Salt to taste
  • 8 slices provolone cheese (large, deli-style)
  • 2 tbsp chopped fresh parsley

Instructions

  1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. Heat olive oil in a skillet over medium heat. Add chopped onion and sauté for 2-3 minutes until soft and translucent.
  3. Add ground beef and cook until browned, breaking it into small pieces.
  4. Stir in thinly sliced green bell pepper and cook for another 3-4 minutes.
  5. Season with garlic powder, smoked paprika, black pepper, and salt. Remove from heat.
  6. Lay out provolone cheese slices on the baking sheet, slightly overlapping them.
  7. Bake cheese for about 5 minutes until melted but pliable.
  8. Remove from oven and cool for about 1 minute.
  9. Spoon the beef mixture along one edge of the melted cheese and roll up.
  10. Repeat for each cheese slice until all filling is used.
  11. If desired, bake roll-ups for an additional 2-3 minutes for crispy edges.
  12. Garnish with chopped fresh parsley and serve hot.

Notes
