Key Lime Cake with Cream Cheese Frosting

  • 1 3/4 cups all-purpose flour
  • 1 1/2 cups granulated sugar
  • 1/2 cup unsalted butter, softened
  • 3/4 cup buttermilk
  • 3 large eggs
  • 1/4 cup fresh lime juice
  • Zest of 2 limes
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 8 oz cream cheese, softened
  • 1/4 cup unsalted butter, softened for frosting
  • 4 cups powdered sugar
  • 2 tablespoons fresh lime juice for frosting

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease and flour two 9-inch round cake pans.
  3. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
  4. Beat in the eggs one at a time, mixing well after each addition.
  5. Stir in fresh lime juice and lime zest.
  6. In another bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt.
  7. Gradually add the dry ingredients to the butter mixture, alternating with the buttermilk, starting and ending with the flour mixture.
  8. Divide the batter equally between the prepared pans.
  9. Bake for 25-30 minutes, until a toothpick comes out clean.
  10. Cool the cakes in the pans for 10 minutes, then transfer to wire racks to cool completely.
  11. Prepare the cream cheese frosting by beating together softened cream cheese and 1/4 cup unsalted butter until smooth.
  12. Gradually add powdered sugar and 2 tablespoons of lime juice until combined and smooth.
  13. Spread frosting between the cooled cake layers, and frost the top and sides of the cake.
  14. Garnish with additional lime zest if desired.
  15. Slice and serve the cake chilled for the best flavor.

Notes

Use fresh limes for best flavor. Chill the cake before serving to enhance the lime flavor.
