Maple Glazed Apple and Brie Stuffed Chicken

  • 4 pieces boneless chicken breasts
  • 1 teaspoon kosher salt
  • ½ teaspoon black pepper
  • 1 piece honeycrisp apple, sliced thin
  • 4 ounces brie cheese, sliced thin
  • 1 cup apple cider or apple juice
  • 2 tablespoons pure maple syrup
  • ½ tablespoon minced garlic
  • 1 teaspoon Dijon mustard
  • 2 teaspoons fresh thyme, removed from stems
  • ½ teaspoon kosher salt

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cut a pocket into each chicken breast.
  3. Season the chicken with kosher salt and black pepper.
  4. Mix the honeycrisp apple slices with brie cheese in a bowl.
  5. Stuff the chicken breasts with the apple and brie mixture.
  6. Prepare the glaze by simmering the apple cider, maple syrup, minced garlic, Dijon mustard, thyme, and salt in a saucepan for 5-7 minutes.
  7. Sear the stuffed chicken in a hot skillet until browned on both sides.
  8. Pour the glaze over the chicken and bake in the oven for about 20-25 minutes.
  9. Let the chicken rest for a few minutes before serving.
