1 lb ground beef
1 cup fresh spinach, finely chopped
3 cloves garlic, minced
1/4 cup breadcrumbs
1/4 cup grated Parmesan cheese
1 large egg
1/2 tsp salt
1/4 tsp black pepper
1/2 tsp Italian seasoning
1 cup mozzarella cheese, cut into small cubes
2 tbsp olive oil
Instructions
In a large bowl, combine ground beef, spinach, garlic, breadcrumbs, Parmesan cheese, egg, salt, black pepper, and Italian seasoning. Mix gently.
Take a small amount of the mixture, flatten it, and place a cube of mozzarella in the center. Roll into a ball, ensuring cheese is encased. Repeat until all meatballs are formed.
In a skillet, heat olive oil over medium heat. Add meatballs and cook for 3-4 minutes on each side until browned and cooked through.
Transfer meatballs to a serving dish. Serve with pasta, in subs, or enjoy as appetizers.
Notes
Use fresh spinach for best flavor. Adjust seasoning before forming meatballs if necessary.
