Orange Cranberry Bread

A delightful treat combining the sweet and tart flavors of cranberries with the bright zest of oranges, perfect for breakfast, snacks, or dessert.

  • 1 cup sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup fresh cranberries, chopped
  • 1/2 cup orange juice
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 tablespoon grated orange zest
  • 1/2 teaspoon vanilla extract
  • 1 cup powdered sugar (for glaze)
  • 2 tablespoons orange juice (for glaze)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. In a large bowl, combine the flour, sugar, baking powder, and salt.
  3. Add the chopped cranberries and toss to coat.
  4. In another bowl, whisk together the orange juice, vegetable oil, eggs, orange zest, and vanilla extract.
  5. Pour the wet mixture into the dry ingredients and stir gently until just combined.
  6. Transfer the batter to the prepared loaf pan and smooth the top.
  7. Bake for 50-60 minutes or until a toothpick inserted comes out clean.
  8. Allow to cool in the pan for 10 minutes, then transfer to a wire rack.
  9. For the glaze, mix powdered sugar with orange juice until smooth and drizzle over the cooled bread.

Notes

Use fresh ingredients for the best flavor and avoid overmixing for a light, fluffy loaf.
