Orange Cranberry Bread

A delicious bread combining zesty orange flavor with tart cranberries, perfect for breakfast or as a holiday gift.

  • 2 cups all-purpose flour
  • 1 cup sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup fresh or frozen cranberries, chopped
  • 1/2 cup orange juice
  • 1/4 cup vegetable oil
  • 2 eggs
  • 1 tablespoon grated orange peel
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. In a large bowl, combine all-purpose flour, sugar, baking powder, baking soda, and salt.
  3. Add the chopped cranberries into the dry mixture and toss to coat.
  4. In another bowl, whisk together orange juice, vegetable oil, eggs, grated orange peel, and vanilla extract.
  5. Pour the wet ingredients into the dry mixture and stir until just combined.
  6. Pour the batter into the greased loaf pan and smooth the top.
  7. Bake for 50-60 minutes, checking for doneness with a toothpick.
  8. Allow the bread to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  9. Optionally, create a glaze by whisking powdered sugar and orange juice, and drizzle over the cooled bread.

Notes

Use fresh cranberries for the best flavor, and feel free to experiment with nuts or chocolate chips for variations.
