Orange Cranberry Bread

A delightful bread combining zesty oranges and tart cranberries, perfect for breakfast or as a sweet treat.

  • 2 cups all-purpose flour
  • 1 cup sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup orange juice
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 tablespoon grated orange zest
  • 1 cup fresh or frozen cranberries
  • 1 cup powdered sugar (for glaze)
  • 23 tablespoons orange juice (for glaze)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a loaf pan.
  2. In a bowl, combine the dry ingredients: flour, sugar, baking powder, baking soda, and salt. Mix well.
  3. In another bowl, mix the wet ingredients: orange juice, vegetable oil, eggs, and grated orange zest until combined.
  4. Pour the wet mixture into the dry ingredients and stir gently to combine.
  5. Fold in the cranberries gently.
  6. Pour the batter into the loaf pan and smooth the top.
  7. Bake for 55-65 minutes, checking with a toothpick for doneness.
  8. Allow to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  9. Prepare the glaze by mixing powdered sugar with orange juice until smooth.
  10. Drizzle the glaze over the cooled bread.
  11. Slice and serve warm or at room temperature.

Notes

Use fresh cranberries for the best flavor. Don’t overmix the batter to avoid tough bread. Consider adding nuts or spices for variation.
