Paleo Sweet Potato Apple Breakfast Bake

A healthy and delicious breakfast option packed with sweet potatoes, apples, and spices, perfect for a paleo diet.

  • 2 large sweet potatoes, peeled and diced
  • 2 apples, diced
  • 1 cup raisins
  • 4 eggs
  • 1/2 cup almond milk
  • 1 teaspoon cinnamon
  • 1/2 cup chopped nuts (optional)
  • 1/4 cup honey or maple syrup (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare your ingredients by peeling and dicing the sweet potatoes and apples.
  3. In a large bowl, combine diced sweet potatoes, diced apples, raisins, and optional chopped nuts.
  4. In another bowl, whisk together eggs, almond milk, cinnamon, and honey or maple syrup.
  5. Pour the egg mixture over the sweet potato mixture and stir until well combined.
  6. Grease an 8×8 inch baking dish and pour the combined mixture into it, spreading evenly.
  7. Bake in the preheated oven for 30-40 minutes until tender and golden brown.
  8. Allow to cool for 5-10 minutes before serving.

Notes

Serve warm and consider adding a drizzle of honey or yogurt for extra flavor. Store leftovers in an airtight container for up to 5 days.
