  • 1/2 cup pumpkin puree
  • 1/2 cup BBQ sauce
  • 1/4 cup breadcrumbs
  • 1 egg
  • 2 cloves garlic, minced
  • 1 jalapeño, sliced (reserve some for garnish)
  • Salt and pepper, to taste
  • Fresh parsley, chopped (for garnish)
  • Ground turkey or chicken (alternative option)
  • Gluten-free breadcrumbs (for gluten-free version)

Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine ground beef, pumpkin puree, BBQ sauce, breadcrumbs, egg, minced garlic, sliced jalapeño, salt, and pepper. Mix until well combined.
  3. Shape the mixture into 1-inch meatballs and place them on the baking sheet, ensuring space between each.
  4. Bake for 20-25 minutes until golden brown and internal temperature reaches 160°F.
  5. While baking, heat remaining BBQ sauce and jalapeño slices in a saucepan over medium heat.
  6. Toss the baked meatballs in the saucepan to coat them in the sauce.

Notes

Store leftovers in an airtight container in the refrigerator for 3-4 days or freeze for up to three months.
