Roasted Red Pepper Stuffed Chicken

  • 4 boneless, skinless chicken breasts
  • 1 cup roasted red peppers, sliced thinly
  • 1 cup fresh spinach
  • 1 cup shredded mozzarella cheese
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • Salt and pepper, to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Prepare the chicken breasts by cutting a pocket into each one.
  3. Dry the chicken with a paper towel.
  4. In a mixing bowl, combine roasted red peppers, spinach, and mozzarella cheese.
  5. Stuff the chicken breasts with the filling mixture.
  6. Drizzle olive oil over the chicken and season with garlic powder, Italian seasoning, salt, and pepper.
  7. Place the chicken in a baking dish and bake for 25 to 30 minutes until cooked through.
  8. Let the chicken rest for a few minutes before serving.
