Savory Beef and Rice Casserole

A delicious and hearty dish that combines beef, rice, and cheese, perfect for busy weeknights or gatherings.

  • 1 cup long-grain white rice
  • 1 small onion, chopped
  • 1 bell pepper, chopped
  • 2 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes
  • 1 can (8 oz) tomato sauce
  • 1 cup beef broth
  • 1 teaspoon paprika
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup shredded cheddar cheese

Instructions

  1. Brown the Ground Beef: Heat a large skillet over medium heat. Add the ground beef and cook for about 5-7 minutes, breaking it into small pieces. Drain excess fat.
  2. Sauté the Vegetables: Add the chopped onion, bell pepper, and minced garlic to the skillet with the cooked beef. Sauté for about 5 minutes until soft.
  3. Combine the Ingredients: Stir in the diced tomatoes, tomato sauce, beef broth, and rice. Add paprika, oregano, salt, and black pepper. Mix well.
  4. Transfer to Casserole Dish: Pour the mixture into a greased casserole dish, ensuring the rice is submerged in liquid.
  5. Cover and Bake: Cover the dish with foil and bake in a preheated oven at 350°F (175°C) for 30 minutes.
  6. Add Cheese and Finish Baking: Remove the foil, sprinkle cheddar cheese on top, and bake for an additional 10-15 minutes until cheese is melted.
  7. Cool and Serve: Allow to cool for a few minutes before serving.
