Scallion Chicken

A quick and flavorful one-skillet dish featuring tender chicken thighs and vibrant scallions, perfect for weeknight dinners.

  • 400g (14oz) Chicken thighs (Boneless, skin-on or skinless)
  • 2 cups Scallions (Chopped, white and green parts separated)
  • 4 tbsp Oil (Vegetable or sesame oil)
  • 2 tbsp Soy sauce (Light soy sauce for umami flavor)
  • ½ tbsp Dark soy sauce (Adds deep color & rich flavor)
  • ½ tbsp Oyster sauce (For a touch of sweetness and depth)
  • ½ tsp Black pepper (Adjust to taste)
  • 2 tbsp Cornstarch (Thickens the sauce and makes chicken tender)
  • 1 tsp Sugar or Honey (Balances the savory flavors)
  • 1 tbsp Rice Vinegar (For extra tang)
  • ½ tsp Sesame Oil (Adds a nutty aroma)

Instructions

  1. Marinate the Chicken: In a large bowl, combine the chicken thighs with light soy sauce, oyster sauce, black pepper, and cornstarch. Mix well and let marinate for 10-15 minutes.
  2. Chop the Scallions: Slice the scallions, separating the white parts from the green.
  3. Cook the Chicken: Heat oil in a non-stick pan over medium-high heat. Add the marinated chicken and cook for about 4-5 minutes on one side, then flip and cook for another 4-5 minutes until fully cooked.
  4. Sauté the Scallions: Add the white parts of the scallions and sauté for 1-2 minutes. Then, add the green parts and stir until just wilted.
  5. Finish Up: Remove from heat and transfer the Scallion Chicken onto a serving dish. Serve hot, optionally with rice, noodles, or steamed vegetables.

Notes

Opt for fresh scallions for the best flavor. Customize with your choice of vegetables or proteins for variations.
