Shrimp and Vegetable Stir Fry

A quick and healthy Shrimp and Vegetable Stir Fry, perfect for busy weeknights, packed with protein and vitamins.

Ingredients

  • 1 pound shrimp, peeled and deveined
  • 2 cups mixed vegetables (bell peppers, broccoli, carrots)
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 2 tablespoons soy sauce
  • 1 teaspoon ginger, minced
  • Salt and pepper to taste
  • Cooked rice for serving

Instructions

  1. Heat the olive oil in a large pan over medium-high heat.
  2. Add the minced garlic and ginger and sauté for about 1 minute until fragrant.
  3. Add the shrimp and cook until pink, about 3 to 4 minutes.
  4. Stir in mixed vegetables and cook until tender yet crisp, about 5 to 7 minutes.
  5. Pour in the soy sauce and season with salt and pepper.
  6. Serve immediately over cooked rice.
