Smothered Baked Chicken Burritos

Comforting and flavorful smothered baked chicken burritos, enveloped in soft tortillas and topped with a cheesy green chili sauce.

  • 6 Burrito-size tortillas
  • 1 cup shredded sharp cheddar cheese
  • Olive oil or nonstick cooking spray
  • 2 tablespoons olive oil
  • 1 tablespoon butter
  • 3 tablespoons flour
  • 2 cups low-sodium chicken broth, warmed
  • 1/2 teaspoon cumin
  • 1/4 to 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/2 cup sour cream
  • 1/2 of a 4 oz. can mild chopped green chilies
  • 1/2 cup shredded sharp cheddar cheese
  • Hot sauce to taste (optional)
  • Diced tomatoes
  • Sliced avocado or guacamole
  • Chopped cilantro
  • Salsa
  • Crushed tortilla strips or chips for extra crunch

Instructions

  1. Prepare the Mexican Chicken: Season chicken pieces with favorite spices, cook in a slow cooker until tender, then shred and set aside.
  2. Preheat the Oven: Preheat to 350°F (175°C).
  3. Assemble the Burritos: Place shredded chicken and cheese in warm tortillas, roll them up, and place seam side down in a greased baking dish.
  4. Bake the Burritos: Spray tops with olive oil and bake for 20-25 minutes until golden and cheese is melted.
  5. Make the Cheesy Green Chili Sour Cream Sauce: Melt butter and olive oil, whisk in flour, add chicken broth until thickened, and stir in cumin, salt, pepper, sour cream, green chilies, and cheese.
  6. Serve with Toppings: Pour sauce over burritos and serve warm with toppings like diced tomatoes, avocado, cilantro, salsa, and tortilla strips.
