Soft Banana Bread Cookies

Soft and chewy cookies made with ripe bananas, oats, and optional add-ins like walnuts and chocolate chips.

  • 2 ripe bananas, mashed
  • ½ cup unsalted butter, softened
  • ¾ cup brown sugar, packed
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 ½ cups all-purpose flour
  • ½ teaspoon baking soda
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • 1 teaspoon cinnamon
  • ½ teaspoon nutmeg
  • ½ cup rolled oats
  • ½ cup chopped walnuts (optional)
  • ½ cup chocolate chips (optional)

Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, mix mashed bananas and softened butter until smooth. Add brown sugar, egg, and vanilla; beat until creamy.
  3. In another bowl, whisk together flour, baking soda, baking powder, salt, cinnamon, and nutmeg.
  4. Gradually fold dry ingredients into wet mixture until just combined.
  5. If using, fold in oats, walnuts, or chocolate chips.
  6. Drop rounded spoonfuls of dough onto the prepared baking sheet, leaving space between each cookie.
  7. Bake for 10-12 minutes until edges are light golden brown. Cool on baking sheet for 5 minutes, then transfer to a wire rack.

Notes

Use ripe bananas for maximum sweetness and flavor. Don’t overmix to ensure a soft texture.
