Street Corn Chicken Chili

A comforting and flavorful dish that combines the richness of street corn with hearty chili, perfect for chilly days and family gatherings.

  • 1 lb chicken breasts, diced
  • 1 can (15 oz) sweet corn, drained
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, chopped
  • 2 cups chicken broth
  • 1 tsp cumin
  • 1 tsp smoked paprika
  • 1/2 tsp chili powder
  • Juice of 1 lime
  • Salt and pepper to taste
  • Cilantro for garnish

Instructions

  1. Heat some oil in a large pot over medium heat.
  2. Add chopped onion and bell pepper, sauté for about 5 minutes.
  3. Add minced garlic and cook for another minute.
  4. Add diced chicken, browning for about 5-7 minutes until no longer pink.
  5. Stir in sweet corn, black beans, chicken broth, cumin, smoked paprika, chili powder, lime juice, salt, and pepper.
  6. Bring to a simmer, then lower the heat and cook for 20-25 minutes.
  7. Taste and adjust seasoning as needed.
  8. Serve warm, garnished with cilantro.

Notes

For extra toppings, consider adding shredded cheese, sour cream, or diced avocados. Pairs well with cornbread or a green salad.
