Stuffed Chicken Breast

Delicious stuffed chicken breast filled with asparagus and mozzarella, perfect for any occasion.

  • 2 large chicken breasts (skinless, boneless, butterflied)
  • 8 asparagus spears, trimmed
  • 1 cup mozzarella cheese, shredded
  • 2 tablespoons olive oil, extra virgin
  • 2 cloves garlic, minced
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon fresh parsley, chopped
  • Toothpicks (for sealing the chicken breasts)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Season the butterflied chicken breasts with paprika, salt, black pepper, and minced garlic.
  3. Lay asparagus spears and shredded mozzarella cheese inside each chicken breast.
  4. Fold the chicken over the filling and secure the edges with toothpicks.
  5. Heat olive oil in a skillet over medium heat and sear the stuffed chicken breasts for about 3-4 minutes on each side.
  6. Transfer the chicken to a baking dish and bake for about 20 minutes until the internal temperature reaches 165°F (75°C).
  7. Remove toothpicks and garnish with freshly chopped parsley before serving.

Notes

Serve with a side salad, roasted vegetables, or grains for a complete meal.
